Celebrating National Piña Colada Day

It’s my favourite day of the year. No, it’s not my birthday. And no, the weather’s not unseasonably warm for 25 December. It’s actually Piña Colada Day. Although I’ve never shied away from a Pornstar Martini or a Mojito, it’s always the Piña Colada that comes out on top. It just has that way of transporting you from your back garden to a sandy Caribbean shore in a matter of sips. So, today we celebrate the rum, the coconut and the pineapple coming together in this summery concoction. Take a look at my recipe below to toast this cocktail!

2 parts coconut flavoured rum
1 part coconut cream
Pineapple juice (to taste)
Fresh pineapple chunk

Fill a cocktail shaker with ice cubes. Add coconut rum and coconut cream. Fill a cocktail glass of your choice with ice, before shaking and straining into the glass. Top up with your perfect amount of pineapple juice. Garnish with a piece of pineapple, and get summer sipping!
